2 Minute Tomato-Roasted Pepper Pasta Sauce and a Massive WORLDWIDE Smart Phone Stand GIVEAWAY!


Why am I giving away a smart phone stand, you ask? Well, I was contacted with an offer to trial and giveaway the Phone Buddy stands and I thought, ‘you know what, this is relevant, I constantly use my phone when cooking, to read my own or others’ recipes and I know that so many of us do now’. So why not? And it meant that I could give away tonnes of these small pieces of genius away to you readers all over the world!


See I have one of those cases that opens out to make a stand, and I love it, well the look of it anyway, but I never use it, it’s bulky and it’s design means I can’t grip my phone and type with one hand which is what I tend to do. Whereas this tiny piece of plastic is so out of the way and doesn’t impede on the use of the phone itself at all.


Plus, it’s design which connects to the phone via the aux socket with either the supplied pin or your headphones means you can easily listen to music or watch video with volume and your headphones really simply! Perfect if you like to watch cook a long videos while you’re in the kitchen!

And to inspire you to get in the kitchen, here’s a super fast pasta sauce which is full of bold, delicious flavour and comes together in seconds in the blender! It’s so full of flavour and very good for you, see below for the nutrition info. It would also make a wonderful soup.


Ingredients: Serves 4

  • 400g can tomatoes
  • 1 roasted red pepper, from a jar in brine or home roasted
  • 1 tbsp capers
  • 1/2 red chilli (or to taste)
  • 2 garlic cloves
  • 1 tsp pomegranate molasses (or coconut or unrefined sugar)
  • 1 tbsp vegan Worcestershire sauce
  • 1/4 tsp dried rosemary
  • 1/2 tsp dried oregano
  • 1/2 tsp onion powder
  • 1/4 tsp sea salt and ground black pepper


Add all ingredients to a blender and blend to desired consistency with no large chunks remaining. This takes 20 seconds in my high powered Optimum 9200 – Next Generation Blender but it might take a little longer in a standard blender or food processor.

Stir straight into hot pasta or bring it to a simmer on the stove first. I like to add it to a pan of sauteed mushrooms before tossing with pasta. This makes enough to cover about 500g/18 oz of pasta or enough to serve 4.

    At the moment, my go-to speedy supper is a toasted crumpet (or two) topped with pesto (veggie of course), sliced tomato and topped with whatever cheese is in the fridge (though preferably mozzarella), grilled again quickly to melt the cheese and then served with a little side salad – tasty and super quick
