Sausage and Saffron Pasta with Spinach

I always do the same thing with my treasured pot of saffron strands – rice.

Last week, I wondered why I didn’t do more with such an expensive and delicious ingredient. I just love its scent which reminds me of the fresh hay I feed my bunnies and the gorgeous golden colour it exudes.

I decided to try it in an Eastern inspired pasta dish, full of fresh coriander, earthy minerally spinach and chunks of pale amber (from the saffron) vegan sausage. Delicioso.

Even Rios (A.K.A Tiger Pants) was desperate for a try!

Ingredients per serving:

  • 2 vegan sausages, cooked and sliced into chunks (I used Linda McCartney brand)
  • 1 tsp oil
  • About 5 spring onions, sliced into thing rounds
  • A pinch of dried thyme
  • 200ml unsweetened almond milk
  • Large pinch of saffron strands
  • 100g fresh spinach
  • Small bunch of coriander, about 10g
  • 100g dry pasta, penne, fusilli, farfalle

Method:

  1. Add the pasta to a pan of boiling salted water and cook until al dente, usually about 10 minutes for dry pasta
  2. Meanwhile, heat the oil and gently saute the spring onions over a low-medium heat just until fragrant and lightly softened. Add the almond milk, saffron, crumble in the thyme and stir in the sausage chunks.
  3. Simmer for a couple of minutes over a medium heat, stirring, until reduced slightly then add the spinach to wilt. Season with salt and pepper.
  4. Stir in the pasta and chopped coriander just before serving.

  1. Oh my goodness – this is a pasta from my own heart! Although not vegan, I can completely see how I can adapt this to suite me (well once I get off my low carb lifestyle!). Saffron is one of my absolute favourite spices…and I too tend to use it in risotto recipes! Love your kittie as well – what a cutie!
