Hot Dog Spaghetti!

I had such a fun lunch today! Vegan hot dogs, cut into chunks with spaghetti thread through served with a tomato sauce. Yum and fun!

Its so easy, all you do is defrost the hot dogs (if necessary) and cut into roughly inch long chunks. Take some dried spaghetti and thread about 6 strands through the hot dog chunks. Boil the pasta in a pan of salted boiling water until al dente of cooked according to package directions.

Meanwhile cook up a tomato sauce. Saute and onion in a teaspoon of olive oil until softened then add a few cloves of crushed garlic and saute for a minute before adding a tin of plum tomatoes. Crush the tomatoes with a wooden spoon and heat until thick and saucy. Season with salt, pepper, a pinch of sugar and herbs if you like. You can use tinned chopped tomatoes, but I think the flavour of even cheap tins of  plum tomatoes is far superior.

I used 4 vegan hot dogs and 150g spaghetti for two people.

Haha….well my other half saw a picture somewhere of little pieces of hot dog thread through single strands of spaghetti, so this is a kind of spin off from that! Definitely great for the little ones! It certainly pleased the child in me 🙂
