Choc Chip Blondies

MMMMM…Yummy, gooey, blondies – brownies just without the brown. Such a treat and these blondies veganized from Smitten Kitchen are ‘infinitely adaptable’ and give you a base recipe to experiment with. As these were for a school bake sale, I kept them simple with just chocolate chips but next time I’m thinking chocolate, nuts, orange zest. coconut – the works!

Oh, did I mention how incredibly easy these are? One bowl and a wooden spoon!

8 tablespoons (1 stick, 4 ounces or 113 grams) vegan margarine, melted
1 cup (218 grams or 7 3/4 ounces for light; 238 grams or 8 3/8 ounces for dark) brown sugar
1 egg replacement
1 teaspoon vanilla or 1/2 teaspoon almond extract
Pinch salt
1 cup (4 3/8 ounces or 125 grams) plain/all-purpose flour

Optional addition ideas:

  • 1/2 to 1 cup chopped nuts, toasting them first for even better flavor
  • 1/2 to 1 cup chocolate chips
  • 1/2 teaspoon mint extract in addition to or in place of the vanilla
  • 1/2 cup mashed bananas
  • 1/4 cup bourbon, scotch or other whiskey; increase the flour by one tablespoon
  • 2 tablespoons of espresso powder with the vanilla
  • Stir 1/2 cup dried fruit, especially dried cherries, into the prepared batter
  • Top with a vanilla butter cream or chocolate peanut butter cream frosting
  • dessicated coconut
  • orange zest
  • maple syrup or extract


Preheat the oven to 180c/350f and grease and line the base (with overhang over 2 parallel sides) of an 8×8 inch (20cm×20cm) tin or similar- I used a 7×11 inch tin. You can also double the recipe and use a 9×13 inch tin.

Mix melted margarine with the brown sugar until smooth then mix in the egg replacer and vanilla until smooth. Stir in the flour and salt then fold through any additions.

Pour into the prepared tin and bake for 20-30 minutes depending on how gooey you like your blondies to be. Cool on a wire rack before cutting or they will fall apart!

I cut mine into 15 but you can get more or less depending on the size you cut them.
