These muffins make a lovely breakfast or teatime treat! Use whatever tea, jam and fruit you fancy!
Ingredients: Makes 12
200g dried fruit
100g light soft brown sugar
400ml boiling tea – 2 bags
2 egg replacements
2tbsp jam or marmalade
450g self raising flour
1 1/2tsp cinnamon
1tsp mixed spice
- Soak fruit in tea for at least an hour
- Heat the oven to 180c and grease a 12 hole muffin tin or place in paper cases.
- Beat egg replacer and jam or marmalade, add fruit and remaining liquid, mix to combine then add in the flour and spices and fold in until just moistened, do not overmix or beat.
- Divide between the cases and bake for 18 minutes until risen and golden and a skewer inserted into the middle comes out clean.
