Our May hostess, Denise, of There’s a Newf in My Soup!, challenged The Daring Cooks to make Gumbo! She provided us with all the recipes we’d need, from creole spices, homemade stock, and Louisiana white rice, to Drew’s Chicken & Smoked Sausage Gumbo and Seafood Gumbo from My New Orleans: The Cookbook, by John Besh.
As I’m a vegetarian I made the Gumbo Z’herbes recipe from here but halved the recipe and adapted it to use the veg that I had in the kitchen.
This was a real joy to make, the colours of the vegetables combined were very beautiful and the aroma was incredible.
I did find the recipe a little time consuming and messy for a weeknight dinner. However, I would make it again, again using whatever I had for a slightly different experience, but maybe just on weekends!
