Maple Almond Blondies

These blondie bars are soft, squidgy, moist, fluffy and scrumptious with a delicious flavour combination of almond and maple syrup, how could they not have worked?!

Maple Almond Blondies
115g vegan margarine, melted and cooled
100g caster sugar sugar
125ml maple syrup
1 tsp each vanilla and almond extract extract
1 egg replacement
110g plain flour
pinch salt
50g ground almonds

Makes about 15

Method:

  • Preheat oven to 180c/350F and grease and line the base of an 8-inch square baking dish or cake tin.
  • In a large bowl, combine margarine, caster sugar, maple syrup, vanilla/almond extracts and the egg replacer and whisk until smooth and well combined.
  • Add in flour and salt and stir just until no streaks of flour remain. Add in ground almonds and stir to distribute evenly. Pour into prepared baking dish.
  • Bake for 25-30 minutes, until blondies are set and lightly golden but still squidgy in the centre..
  • Leave to cool in pan on a wire rack before slicing.
