Chocolate Chunk Cookies

You will have the most perfect, chewy inside and crisp edged chocolate chip or chunk cookies in just 20 minutes from start to finish with only 5 ingredients, one bowl and one mixing spoon. Sound too good to be true? Try it and see!

As with all the recipes I use, I tried so many of them before this one! They were good, yeah, but not perfect. I want perfection, especially when it comes to cookies, and for me, as daft as it sounds, perfection included a cracked top – what is a visual mark of a cookie in my eyes.

These cookies are so adaptable, you can add and vary flavour combinations until there are no more possibilities left!

These cookies don’t use eggs so are great for those with egg allergies.

Makes 10 large cookies, recipe can be multiplied.

Ingredients:

112g soft vegan margarine

112g caster sugar (I sometimes substitute half or all soft light brown sugar for more caramel like cookies)

85g condensed milk (try soya or other non-dairy condensed milk for vegan option)

1tsp vanilla extract

175g self raising flour

125g chocolate chips or chopped chocolate

75g nuts or fruit etc (optional)

Method:

  • Preheat oven to 180c and lightly grease 2 baking sheets
  • Cream together the margarine and sugar until pale and fluffy
  • Mix in the condensed milk and vanilla until smooth and combined
  • Fold in the flour, followed by the chocolate and any nuts etc
  • Roll large heaped tablespoons of the dough into balls, a little larger than a walnut, you should get about 10 balls
  • Place on the trays, very well spaced apart
  • Bake for 15 minutes
  • Remove from the oven and leave on the trays to harden for a few minutes before transferring to a wire rack to cool

  5. These look so good! I’m a very recent vegan and so I’m constantly looking for ways of keeping my old favourites and treats but the vegan version! I’ll have to add these to my shopping list for next week! 🙂
